Blueberry Buttermilk Pancakes

Blueberry Buttermilk Pancakes

Ingredients

1/2 cup unsalted butter, melted
2 cups buttermilk
2 cups flour
1/4 cup sugar
2 tsp baking powder
1 tsp baking soda
2 eggs
2 tsp vanilla
1 cup blueberries

Cooking Instructions

1. In a large bowl, stir in flour with sugar, baking powder and baking soda.
2. In a medium bowl, whisk eggs with buttermilk, melted butter and vanilla. Pour into flour mixture
3. Stir until just blended. Your batter should be lumpy. (For fluffy pancakes, you should mix as little as possible.)
4. Lightly coat a large frying pan with butter and set over medium heat. Pour 1/3 cup batter into the pan for each pancake.
5. Gently and lightly press the blueberries into the pancakes.
6. Cook until bubbles form on the top of each pancake and edges begin to brown (2-4 mins) and then flip with a wide spatula and continue cooking until the bottoms of the pancakes turn golden (2-3 mins).


* Makes about 12 pancakes;
** Other fruits than blueberries may used: raspberries, strawberries, peaches, bananas, etc.;
*** If you do not have buttermilk on hand: mix 2 cups of milk with 2 tbsp lemon juice and let stand 5 mins.
