Homemade Blueberry Cheesecake.
RECIPE
Blueberry Cheesecake
Ingredients
Crust
1-3/4 cups crushed Oreo cookies
3 tbsp unsalted butter, melted
Filling
1-1/2 pkg (8 oz/250 g each) cream cheese, softened
1/3 cup granulated sugar
1/2 cup sour cream
2 eggs
1 tbsp flour
1 tsp vanilla
Topping
1-1/2 pint of blueberries
1 pkg blueberry glaze mix
Baking Instructions
Crust
1. In a bowl, stir cookies with butter.
2. Press onto bottom and up side of 9-inch (23 cm) pie plate.
3. Bake in 350°F oven until firm to the touch, 10 to 12 minutes. Let cool.
Filling
1. Meanwhile, in large bowl, beat cream cheese with sugar until fluffy; beat in sour cream, eggs and flour. Spread in pie shell.
2. Bake in 350°F oven until shine disappears and edge is set but centre still jiggles slightly, about 30 minutes.
3. Let cool on rack. Cover and refrigerate until firm, about 4 hours.
Topping
1. Follow instructions written on package, and spread on chilled cheesecake.
2. Let chill with glaze for minimum of 1 hour.
* Oreo cookie crumbs can be replaced with oatmeal or Graham cookie crumbs.
** For best results, I chill my cheesecake overnight with the glazed fruits.
